Ingredients
  • 2 chicken breasts (12 oz / 340 g)
  • 1 large egg + 2 tbsp milk
  • ½ cup (60 g) panko
  • ¼ cup (30 g) flour
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 2 brioche buns
  • 2 tbsp mayo + 1 tbsp hot sauce
  • 4 dill pickle chips
Method
  1. Preheat the air fryer to 400°F (200°C) for 3 minutes. A cold basket is the number one reason breading goes soggy.
  2. Slice each breast horizontally into two thin cutlets, about ½ inch thick, so they cook through before the crust burns.
  3. Dredge flour → egg → panko, pressing the crumbs on firmly. Loose breading blows off in the air fryer.
  4. Spray both sides generously. That's what turns the panko golden instead of dusty white.
  5. Air fry 12 to 14 minutes, flipping once, until it reads 165°F (74°C). Don't crowd the basket.
