Every ingredient is assigned a gram weight and costed against USDA-range reference values, then divided by servings. Nobody eyeballs it. Nobody rounds up because it looks better on a cover.

Every book we publish has a page most cookbooks don't have: the one that explains exactly how the nutrition was calculated, and where the number is soft.
None of that makes the numbers perfect. It makes them checkable, which is a different and more useful thing. We'd rather tell you where a figure is an estimate than let you believe it came out of a laboratory.

There's no printer, no shipping container, no distributor taking more than half. A recipe book doesn't need to be a physical object to be good — it needs to be right, and it needs to be in your hand before you've lost interest.
